How to Cook Soft, White Ugali Every Single Time

Ugali is the plate that holds a Kenyan meal together. Get it right and the rest of dinner works; get it wrong and no stew can save it.

The secret is not complicated. It is the ratio, the heat and the flour. Grade 1 sifted, fortified maize flour absorbs water evenly, which is why Nice Extra Premium gives you soft, white ugali without lumps.

The ratio that works

For firm ugali, use roughly one part flour to two parts water by volume. For softer ugali served with vegetables, move closer to one part flour to two and a half parts water.

  • 500 g Nice Extra Premium maize flour
  • 1 litre water for firm ugali, 1.2 litres for soft ugali
  • A pinch of salt (optional)

Step-by-step method

  • Bring the water to a rolling boil in a heavy sufuria.
  • Sprinkle in about a third of the flour while stirring in one direction to form a smooth porridge.
  • Add the rest of the flour gradually, folding rather than beating.
  • Turn and press the ugali against the sides of the sufuria for 5–7 minutes on low heat.
  • Shape into a mound, cover for one minute, then turn out onto a plate.

Three mistakes to avoid

  • Adding flour to cold or lukewarm water — this is the main cause of lumps.
  • Rushing the last five minutes; undercooked ugali tastes raw and falls apart.
  • Using unsifted flour, which gives a grey, grainy finish instead of a clean white one.

What to serve it with

Common questions

Why is my ugali lumpy?

Lumps form when flour meets water that is not boiling, or when it is added too fast. Bring the water to a full rolling boil and sprinkle the first third of the flour in slowly while stirring in one direction.

How long should ugali cook?

After all the flour is in, turn and press the ugali for 5 to 7 minutes over low heat. It is ready when it pulls cleanly away from the sides of the sufuria and looks glossy.
